inulin is a polysaccaride starch analog, not a sugar.

As a Neolithic gardener I find that American vegetables are all useable, while most of the self-important European varieties can't compete with the equally delicious European weeds, rendering themselves uncultivateable.

Wow! "Inulin" versus "insulin". That's quite perceptive. But is then the rest of the sentence correct? Does "inulin" perform the same task as the writer's original "insulin"? And why exactly should this be required reading for all schoolchildren? Was this written with schoolchildren in mind? And why should "bold assertions" put this on "less than solid academic ground"? Is the critic saying that "solid academic ground" has no room for "bold assertions"? I've always believed as much but never been brave enough to say as much!!
